While the interior merges modern minimalism with traditional Kazakh craftsmanship, handwoven carpets, custom-carved chairs, and ornamental details – each crafted by local artisans bring warmth and authenticity to the space. Also there is a separate room, styled as a traditional yurt.
The menu features unique variations of Central Asian dishes inspired by the nomadic lifestyle. Neo-nomad cuisine is prepared over an open flame, in cauldrons, on the grill, and in tandyrs. Some ingredients, such as herbs and vegetables, are grown on a small farm within the restaurant’s grounds.
Most dishes are based on three essential ingredients of nomadic culture: water, flour, and meat. Staying true to the seasonal and regional nature of ancient nomadic food, Auyl places a strong emphasis on local, historically accessible ingredients and cooking techniques.
Auyl has been recognized as one of the sixteen most beautiful restaurants in the world by the Prix Versailles, an annual architectural award by UNESCO.
